I Just didn’t See the Point in Doing Sourdough

Last year, I became interested in baking sourdough bread. I watched some videos and learned the basics, but it was all theoretical. I had never actually tried it—it felt overwhelming.

Besides, I liked store-bought bread and didn’t see the point in putting so much effort into making something that was hard to prepare but easy to buy, especially when it seemed like the end product was essentially the same.

Though I’ve always enjoyed baking (not sourdough), especially on weekends when I had a little more time.

Then, sometime in December, I learned about the benefits of freshly milled flour, and it became clear why I should bake my own bread. Freshly milled flour contains up to 39 essential vitamins and minerals, while store-bought bread has none of those. It was the mindblowing discovery for me that I could have All the benefits if I would mill flour myself.

I had always kind of known that store-bought bread wasn’t the best, but it never occurred to me that I could actually make my own flour and bake something that’s not only good but also healthy.

That was the turning point for me, it was a good enough reason to mill my own flour and start baking my own bread. So, I asked my family for a grain mill as a Christmas present. I came to a conclusion that even if I would bake once a week as I did before and couldn’t learn to bake bread, the benefits were worth it. Since then, I’ve started my journey of trial and error with sourdough bread and baking with whole grain flour.
